This is a nice cool summer salad, perfect for a cleansing and healing diet. The blueberries help to support your system by offering lots of antioxidants. The cucumber is perfect for hydration and boosting alkalinity. And the mint offers support as an anti-inflammatory.
1 large seasonal cucumber, peeled and cubed
1 c. fresh blueberries (washed just before use)
1 lemon, juiced
1 1/2 Tb. honey
1/2 Tb. olive oil
Dash kosher salt
Large handful fresh mint, finely chopped
Wash, peel, and cube your cucumber, discarding the seeds. Add to a mixing bowl, along with rinsed berries.
In a small bowl, combine lemon juice, honey, oil, salt and pepper. Pour over the cucumber/blueberry mixture then refrigerate & cool for 15 minutes.
Just before serving, toss in mint and stir to combine.
