Try this terrific, light and healthy summer salad! This was inspired by SkinnyTaste.com, though we added a nice twist of fresh carrots instead of cheese! Perfect for dairy-free diet, vegan, and gluten-free diets!
1 bunch kale, preferably dinosaur (lacinato), ribs removed and discarded (about 6 oz total without ribs)
1 tbsp extra-virgin olive oil
1/2 tsp kosher salt
1 tbsp freshly squeeze lemon juice (from 1/2 lemon)
1 large carrot, diced or peeled in light slices
An aged Balsamic vinegar
Slice the kale into 1/4-inch thin strips. In a large bowl combine the kale with oil and salt. Using your hands, massage the kale for 3 minutes until it softens a bit.
Next, dice or peel your carrot to add.
Toss with the lemon juice, balsamic, and carrots and serve.
