Last week, LI Greenmarket kicked off its Garden Mentoring Program at the Nike Alternative High School with a great day in the garden, and then cooking in the classroom.
Several students helped harvest Swiss Chard in a few of the raised beds in front of the school property. They also dug through other beds to find 2 varieties of potatoes: purple and fingerling. After cleaning the harvest, students then prepared what they named, " Potatoes 2 Ways with Swiss Chard." Potatoes were both boiled and mashed, and also Pan-Fried then paired with sautéed Swiss Chard, Garlic, and onions.
After all the ingredients were prepared, the finished dish was plated and shared with all fellow students for lunch time. What a way to eat! From School Gardens to School Tables!
