Makes approximately 6 servings
2 tablespoons olive oil
3 medium zucchini ( yellow and green) , sliced and halved*
2 cloves garlic, minced*
1 medium onion, sliced*
3 medium tomatoes, diced*
2 tablespoon fresh basil, chopped*
Fresh ground pepper to taste

Heat olive oil in large skillet over medium heat. Add onions and sauté until softened ( 5 minutes).
Add zucchini, tomatoes and garlic. Add basil and pepper to taste. Stir to combine, cover and simmer.Continue to stir occasionally until tender (10-15minutes). Remove from heat and serve.
