    Carrots are abound! This is a tasty salad to offer for lunches. It's perfect for a quick side dish and refrigerates beautifully.

     

    The recipe: Sourced from Cooking Light.

    Ingredients: Sourced from LI Greenmarkets as much as possible.

     

     

    Serves: 4 – ¾ cup servings

     

    Ingredients:

    3 cups matchstick – cut carrots*

    1 ½ tbls. Toasted sesame seeds*

    1 ½ tbls. Rice vinegar

    1 tbls. Dark sesame oil

    1 tsp. low sodium soy sauce or Bragg’s liquid amino

    ½ tsp. freshly ground pepper*

     

     

    Preparation:

    Combine carrots, sesame seeds, vinegar, sesame oil, soy sauce, and pepper in a large

    bowl; toss well to coat.

     

     

    Nutrition Facts: (for 12 servings, not including salt added to taste or extra oil for

    brushing). Calories 134, Total fat, 7g., Saturated Fat 1g., Cholesterol 0mg., Sodium 15

    mg., Total Carbohydrates 18 g, Dietary Fiber 3g.,Sugars 5g., Protein 3 g.
