Carrots are abound! This is a tasty salad to offer for lunches. It's perfect for a quick side dish and refrigerates beautifully.

Ingredients: Sourced from LI Greenmarkets as much as possible.
Serves: 4 – ¾ cup servings
Ingredients:
3 cups matchstick – cut carrots*
1 ½ tbls. Toasted sesame seeds*
1 ½ tbls. Rice vinegar
1 tbls. Dark sesame oil
1 tsp. low sodium soy sauce or Bragg’s liquid amino
½ tsp. freshly ground pepper*
Preparation:
Combine carrots, sesame seeds, vinegar, sesame oil, soy sauce, and pepper in a large
bowl; toss well to coat.
